I performed my first low carb cooking demonstration and showed the world the wonders of the mock danish. Mock danishes were one of the new comfort foods that I learned how to cook and was used to kill cravings that threatened the diet early on. Some qualifications for Kent's comfort foods were it had to be both easy and quick to make, and it could not have a lot of ingredients to prep. Most of the recipes, I will be demonstrating have my seal of approval for taste and ease in preparation. :-) Here is the Mock Danish recipe: 2 oz Cream Cheese, softened 1 egg 1.5 - 2 tsp Splenda (**count against artificial sweetener count for the day) 1/2 tsp Vanilla 1 TBS Ground Flax meal (optional) Topping 1 TBS Butter .5 tsp Splenda Dash Cinnamon

Yep that is pretty much the recipe... Here is one that I found: Low Carb Cocoa Recipe 1 spoon dutch processed cocoa - just make sure it is unsweetened 2-3 packets Splenda Cream Put the cocoa and Splenda in a mug and add hot water to about 2/3 full. Then add cream.

Do you have a hot chocolate recipe that is induction friendly? Can I use cocoa powder mix and replace the sugar with splenda?

Yes it is. Eggs, Cream Cheese (within your daily limit of 3-4 oz), vanilla extract (spice) and artificial sweeteners (under 3x per day) are all allowed.
